Hi Nisha, I came here so I could just let you know how pleased I am. Your Curry Bible arrived this morning and I have not dived into a book so quickly since the last Harry Potter book :-) Whizzing through it I stopped where I wanted to be Chicken Byryani, I can't wait and I want to thank you for re-awakening Indian food to me rather than popping off to my local restaurant.

Another really useful video, thanks Nisha. I love how you explain the whys. Here’s an idea for another.. I often wonder why you always say to use vegetable oil. A little while ago I got a tin of Ghee from Aldi and have started using it to cook curries. So…to Ghee or not to Ghee, that is the question. 😂

Thank you. I'll look them up. One thing I always wonder is regarding chilli powder in your recipes; is it always s regulat cayenne chilli powder you mean. I bought some Kashmiri chilli powder, but I feel it would take more than a quarter teaspoon to give some background heat. Would a little of both work?

i usually use normal reg chili powder. Kashmiri is milder.I like my dishes quite mild. you see- to add more heat go half a teaspoon of regular chili powder
