Red Cabbage and Cashew Coleslaw

I Love this dish with the cashew nuts but you can totally leave them out to make it nut free. I usually use vegan mayo to make it totally plant based. Makes a red cabbage go a long long way

Really tasty. We’re having it as part of our New Year’s Eve dinner. I can imagine it would also be delicious if some different ingredients were switched in - pecans or walnuts, edamame. We’ll definitely be using this recipe again
