I made this with quoin pieces, as I am vegetarian, also a slightly forgetful one. Had to use chickpeas as a substitution for red lentils, thoughts I had some left...anyway beautiful flavours, a bit like a sunny day.

I am wondering how to make maslal/garam masala spice bend from scratch. I have plenty of raw ingredients and thought I could get a good blend together, but something seems to be missing. I have corriander seeds, cumin seeds, fenugreek, mace, nutmeg, cardamon seeds and cassia bark. I know the coriander, cumin and fenugreek is for the base...

OK so the bengali rolls royce GM is just green cardamom cinnamon cloves in equal measure. potent stuff- throw in some coriander seeds and cumin seeds aall equal and that should be good stuff but then go easy in the recipes as it is strong

I made this on Monday night and although I think it was tasty, there was a bit too much water for my liking. I felt it took the shine off it. But fear not, I will 100% be trying this again but less water.

I only use about 600ml of water and I use it to wash out the chopped tomato tin too! 😉

When time to add the greens realised I forgot to buy sugar snaps! Good old frozen peas helped me out😅 All tastes good anyway even if not authentic recipe. Very forgiving dish for the forgetful cooks in the audience , thank you!!
