Could you use Okra instead of the runners/ green beans? And do you have any recipe ideas for frozen Okra?

You would have to fry the okra first until it is almost crisp and then stir it in at the end- Frozen Okra- fry until almost crisp and then use as green beans in a curry- In my Spice Tree book or Meat Free Mowgli there are many bean and okra recipes wherever you use beans you can use fried okra

Great advice thank you. I got the Spice Tree book for Christmas, just haven't had a chance to sit down and go through it yet! Looking forward to trying it!
