Turn cooking mode on

Step 1

Put the lentils, mango, chopped tomatoes, ground turmeric and 1 litre of boiling water into a large pan over a medium heat. Bring to the boil then reduce the heat to a simmer, cover the pan with a lid and leave to cook for 15 mins until lentils are soft.

Could you use Okra instead of the runners/ green beans? And do you have any recipe ideas for frozen Okra?

You would have to fry the okra first until it is almost crisp and then stir it in at the end- Frozen Okra- fry until almost crisp and then use as green beans in a curry- In my Spice Tree book or Meat Free Mowgli there are many bean and okra recipes wherever you use beans you can use fried okra
