Heat 4 tbsp olive or other oil in a pan with a tight fitting lid.

Notes

Choose a pan that has a tight fitting lid. You can use stock instead of water for extra chicken oomph. I added dry plums but you don’t have to – same with peas – add what you like.

OK, I don’t know if I’m doing something wrong but my video is not stating any spice quantities (apart from cumin and I can see it’s one chilli) and no info on how much chicken on the video or the written recipe. How do I get that info?

Ok, now have spice info for 4 people (I’m doing it for 5 so will add a bit) but still no chicken quantity. Do you just guess what seems ok? Will that affect water absorption?

Made it for supper last night. Simple & delicious with so few ingredients. Used thai rice instead of basmati, took a bit longer to cook.
