Add 6 tablespoons of neutral oil to a pan. Add two white diced onions, four cloves of garlic minced, and 2 inches of ginger minced. Add 1 teaspoon of salt and fry on a medium heat until the onions are golden brown.

Hi Nisha, I have cooked quite a few of your recipes, all excellent, but Pathia is my absolute favourite, so cooking it tonight! It’s normally quite spicy where eat locally, is there a way to increase the heat a bit, or is this hot enough? Thanks. Neil

Yes do add 1 tsp chili powder and that will dial up the heat or add 3 chopped green chilies for a fresher heat

You can make a lamb pathia with the same spices but a long slow cook with a bit more water to loosen

I need to make this for my hubby as it is his favourite but he loves a chicken tikka patia. Can you suggest best marinade to tikka the chicken for this recipe please?

Then before you add the chicken- get some tandoori masala and rub the chicken with a tbsp of that and a splash of oil. Fry the pieces quickly just to get a little char and then add it into the pathia sauce and poach until cooked
