Heat the oil in a heavy-based pan over a medium to high heat. Once hot add the mustard seeds and fry until they fizz and pop. Next, add the onions, cook for 6 minutes, and then add the ginger, garlic, and curry leaves. Cook for a further 2 minutes or until it is all golden brown.

Step 3 says add the spices, but then step 4 says add turmeric, chilli and garam masala. Please could you explain what I should at at step 3, is it just the ground coriander?

Gayle thank you so much for this indicator- I have removed the adding of spice at stage 3 and they all go in at stage 4- let me know how it goes
