Take a baking tray and add 4 tablespoons of neutral oil, four chicken breasts or thighs diced the onions ginger garlic , 1 teaspoon of turmeric, 1/4 of a teaspoon of chilli powder, 2 teaspoons of garam masala, 2 teaspoons of coriander powder, 1 teaspoon of salt, 3 teaspoons of soft brown sugar, 160 ml of coconut milk, and 2 inches off a block of creamed coconut.

Absolutely delicious and incredibly easy to make. I fried off my onions for 10 minutes first after reading some comments. Really impressed with the result and my family thoroughly enjoyed it too.

At your book launch on Monday night you mentioned a substitute for coconut milk = yoghurt plus something else. I can’t remember the something else !!! ? Do you use the same volume as the coconut milk ?

Yoghurt or creme fraiche with a little off a creamed coconut block if you need- No for yog/ creme it is 3 large tbsp - coco milk is a tin reduced down

I followed the recipe exactly, but in the thirty minutes, the onions were nowhere NEAR cooked - it needed another 30 minutes at least and I had to turn the oven up - in my opinion this isn't a tray-bake kind of dish, needs to be done in a sautee pan to coax the flavors out using the spices - add those to the onions and sautee until the onions are done, maybe add the chicken and brown it nicely and then add the coconut milk etc - and possibly then put it in the oven or else just finish off on stove top. Was disappointing, even though followed the recipe exactly.

Yes just use an extra spoon of brown sugar and reduce the coconut milk down

You can add ground sunflower seeds but the truth is it doesn’t necessarily need the almonds. You’ll see another coma recipe on the app that does not use almonds or any nuts.

Yes, try to Brown them first. If you cut them very fine and cook it good and long the onion should Cook. The other crazy hack is to use frozen onions which cook a lot quicker in a tray bake.
