Ingredients: 6 Chicken drumsticks / thighs; 6 tbsp Yoghurt; 1 Lemon juice; Salt; 4 tbsp Tandoori masala; 6 cloves Garlic; 3 inch Ginger; 6 tbsp Vegetable oil; Honey; 6 Chicken legs / thighs; 6 tbsp Yoghurt; 1 Lemon juice; 1 tsp Chilli powder; 6 tbsp Vegetable oil; 6 cloves Garlic; 3 inch Ginger; 2 tsp Kashmir chilli powder; 2 tsp Garam masala; 1 tsp Turmeric; Salt; 1/2 tsp Fenugreek powder; Honey

This is great if you can leave it overnight or even for an hour, but the truth is it can go straight into the oven or the air fryer just as I have done here.

Notes

Boneless chicken or breast can be used instead of drumsticks/thighs. You can add a little drizzle of honey if you like. You can roast immediately or leave it overnight for epic flavour. This is great if you can leave it overnight or even for an hour, but it can go straight into the oven or air fryer. Barbecue is always best for authentic flavour, but oven works for a quick dinner. Adding more yoghurt makes a nice sauce around the chicken, great with rice.

After finding an Indian supermarket Spain to top up my ingredients, I forgot the fresh ginger, so I had to improvise with ginger powder (brought from my local Asian supermarket in Basel, Switzerland). But this really was delicious… I made loads, so we have several meals worth. I used all boneless meat as my husband prefers, so a combination of boneless thighs and breast meat… all bought from Mercodona supermarket in Spain. This will be a regular dish on our menu.

Yesterday evening we visited your Mowgli restaurant in Norwich. Was my wish. My son attended on the UK Universities sprint kayak race and I just found out there is Mowgli. We were on your husband's concert in Reading. My husband listening the cd we bought there and I am cooking your meals. Our dinners are now 80% Indian foods not Hungarian or Slovakian.😀 The yesterday Mowgli was extremely lovely the food amazing and the staff and service excellent. Thank you ❤️❤️❤️

The flavour was amazing. Unfortunately, in this instance, the chef was an idiot and didn’t put the oven on the right setting, so had to finish by grilling it! Next time will do it properly, I promise!!!
